400g fresh tea leaves

1 cup rice flour

1 cup salt

4 cloves garlic, minced

4 shallots, minced

1-2 chili peppers, minced

1/2 teaspoon shrimp paste

1/2 teaspoon fish sauce

Instructions:

  1. Wash the tea leaves thoroughly in cold water and then soak them in warm water for 10-15 minutes.
  2. Drain the water and squeeze out any excess moisture from the tea leaves.
  3. Add the rice flour and salt to the tea leaves and mix well.
  4. Put the mixture in a large container and cover it with a damp cloth.
  5. Let it sit for 2-3 days to allow the tea leaves to ferment.
  6. After 2-3 days, mix in the minced garlic, shallots, chili peppers, shrimp paste, and fish sauce.
  7. Mix well and transfer the mixture to an airtight container.
  8. Leave the container at room temperature for another 2-3 days to allow the mixture to pickle.
  9. After 2-3 days, the laphet should be ready to eat.
  10. Serve as a side dish with roasted peanuts or sesame seeds, or use it as a topping for salads or noodles.
